Let's consider a plan of this operation.
The fundamental principles are as follows. How to eat it elegantly and tasty !

  1. Understand the pleasure of silence
  2. Do not pick it up. Fit softly, Slide off (disassemble) and scoop up.
  3. Scoop up by large portion, not only the meat but also bone.
  4. Even, love the fish bone.


There are some bones in green circles.
Then, Hashi operation procedure is as arrows.
  • ‡@Remove the "Kama"(near the gills of fish)
  • ‡AFit and insert the Hashi along with the side lines , and then silide off the meat portion.
  • ‡BInsert the Hashi under the back bone and lift it up softly to remove.
  • ‡CAround fins area are very much bony. Insert the hashi under the fins softly to remove them.
  • ‡DHead area , , , , Mu,Mu,Mu, incredible extreamly wonderfull tasty part .
