First,
study the fundamental hand action without "Hashi".

This is my right hand.
(The reason of gary at the top of forefinger is callus by cooking knife.)
We have no smart models in our kitchen.
Sorry for my sexy hand.
Ha, Ha, Ha, Ha, ,

For study, please use the narrow top Hashi.
The ticker Hashi and/or splittable chopsticks (Wari-Bashi) can be used without any skills.

The first joint of your sumfinger should be along with the forefinger side, softly.
You can see the "X" in a picture.
Don't move the sumfinger and move the forefinger together
with middlefinger to the direction of arrow.
This is the fundamental action of Hashi.
During this action,
the person can not keep the sumfinger is not skilled Hashi operater, yet.
If you can say "easy ! ", please try to do by left hand.
I belive that you can imagine the point of difficulty.
The sumfinger moves like rubing/gripping, isn't it ?
You understand the importance of keeping sumfinger, please repeat and repeat.
Other fingers can move together .
Relax the palm of your hand and arm.

Next !
Keep the shape and hold one piece of Hashi.
Hold it like a pencil , softly.
Mark "X" is moved into front.
See the picture.
Please remenber the fundamental action.
Keep sumfinger carefully.
Forefinger and middlefinger move the direction of the arrow…..
So, a piece of Hashi moves smoothly, isn't it ?
We can say that the Hashi function is consisted of this action only.
Until you get the perfect action, repeat repeat repeat and relax.

Go ahead !
Let's study how to hold the other piece of Hashi.
It is very easy to explain. But, it is not easy to do it.
Do not abandan !
There are not too much more technical points.
Put the other Hashi on the fork/base of sumfinger,
and on the second joint of 3rd finger, like a bridge.
Cramp it by sumfinger with slight force, , , , Look there !
Fixed it now.
OK ! Keep this condition.
And try to move forefinger with middle finger.
You can use them to pick something up, release , pick something again, freely.
Attention please to keep the position of a piece of Hashi.
If it will be move, please set it up again and move forefinger with middlefinger.
No moving the sumfinger makes keeping stable positioning of a piece of Hashi.
All fingers understand this point and keep stable position,
your goal is near here.

--iron hashi--
Did you get all ?
Please hold a pair of Hashi together.
Upper side is moving smoothly
Lower side is stable
Action !
Check again the all points OK ?
Try to pick something up.
The more You make the distance between sticks,
the more force can be pointed to pick someting up.
We, Japanese cook , do the exercise by gingko nut and/or beans.
Moving from right dish into left dish and return again, , , , , .
One of the most tough target for trainning is steel bearing ball.
Please try it , if you like ~ ~ ~.

If you are interested in expart class, Please try to use the iron Hashi.
The iron Hashi is used by professional Japanese cook,
to serve the SASHIMI and to do the presized display on the dish.
It is too much heavy weight to use for beginner.
Without any trainning, nobody can fix the top point of Hashi.
However, there are no iron Hashi in your home kitchen, I think.
In that case, you can enjoy professional Hashi action by bamboo-skewers.
Speedy serving SASHIMI with your skilled Hashi manner and say
" Hey ! WASABI (Japanese green horse-radish) is ready ?! "
to your young assisitants in the kitchen.
You can be the professional Japanese cook, in your imagination !

Let's charenge next step ! "How to handle the fish menu !"
